Zucchini, Squash, Sausage & Shrimp Skillet: A Savory One-Pan Meal

Slice the zucchini and yellow squash into rounds or half-moons, depending on your preference.
Slice the sausage into rounds or half-inch pieces.
Peel and devein the shrimp if not already done.
Cook the Sausage:

In a large skillet, heat 1 tablespoon of olive oil over medium heat.
Add the sausage slices to the skillet and cook for 5-7 minutes, or until browned and cooked through. Remove the sausage from the pan and set it aside.
Cook the Vegetables:

In the same skillet, add another tablespoon of olive oil.
Add the sliced zucchini and squash, and sauté for 4-5 minutes, until they start to soften.
Add the minced garlic and cook for another 1-2 minutes, stirring frequently to prevent burning.
Cook the Shrimp:

Add the shrimp to the skillet with the vegetables and cook for 3-4 minutes, or until the shrimp turn pink and are cooked through.
Season the mixture with paprika, thyme, oregano, salt, and pepper. Stir everything to combine.
Combine and Heat Through:

Return the cooked sausage to the skillet and mix everything together. Let the dish heat through for another 2-3 minutes, allowing the flavors to meld.
Garnish and Serve:

Sprinkle the dish with freshly chopped parsley and grated Parmesan cheese (if desired).
Serve immediately while hot.
