Zucchini Oatmeal Breakfast

Grate the zucchini using a box grater or a food processor. Squeeze out excess moisture from the zucchini using a clean kitchen towel or paper towel to avoid a watery mixture.

Step 2: Combine Ingredients

In a bowl, combine the grated zucchini, oat flakes, grated cheese, eggs, salt, and black pepper. Mix everything together until the ingredients are well incorporated.

Step 3: Cook the Mixture

Heat a non-stick skillet over medium heat. Once hot, pour the zucchini mixture into the pan, pressing it down gently to form a flat layer.

Cook for about 3-5 minutes, then flip it over and cook for another 3-5 minutes, until both sides are golden and crispy.

Step 4: Garnish and Serve

Once cooked, remove from the pan and plate. Garnish with chopped spring onions (optional) for added flavor and a pop of color.
