Zucchini Delights: A 10-Minute Vegetarian Recipe Passed Down From My Mother

Prepare the Vegetables: Slice the zucchini and potatoes into thin rounds or half-moons, as preferred.

Mix the Batter: In a large bowl, whisk together the beaten eggs, milk, and vegetable oil. Add the flour, semolina, baking powder, and salt, stirring until the batter is smooth.

Add the Veggies and Cheese: Fold in the sliced zucchini, potatoes, chopped chives, and grated cheese, mixing everything together until evenly coated.

Cook the Dish: Heat a non-stick skillet over medium heat and add a little bit of oil. Once hot, spoon the mixture into the pan in small portions, pressing them down gently into patties. Cook for about 3-4 minutes on each side or until golden brown and crispy.
