Prepare the zucchini:

Mix the ingredients:
In a large bowl, combine the grated zucchini, ricotta cheese, breadcrumbs, Parmesan cheese, egg, and Herbs of Provence. Add salt to taste. Mix everything well until the mixture comes together and holds its shape.
Form the zucchini balls:
Take small portions of the mixture and roll them into balls, about 1 to 1.5 inches in diameter.
Cook the zucchini balls:
Heat a little olive oil in a skillet over medium heat. Once hot, add the zucchini balls and cook for 3-4 minutes on each side, or until golden and crispy on the outside. Be sure to turn them gently to cook evenly.
Serve:
Once cooked, remove from the skillet and place on a plate lined with paper towels to absorb any excess oil. Serve warm with your favorite dipping sauce or as a side dish to your main meal.
