Zucchini Balls: Quick and Easy 10-Minute Dinner

Prepare the Zucchini:

Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out any excess moisture.

Mix the Ingredients:

In a mixing bowl, combine the grated zucchini, ricotta cheese, breadcrumbs, Parmesan cheese, salt, and Herbs of Provence. Mix everything until well combined.

Form the Zucchini Balls:

Take a small portion of the mixture and roll it into a ball, about the size of a golf ball. Repeat with the remaining mixture.

Cook the Zucchini Balls:

Heat a non-stick skillet over medium heat and add a bit of olive oil. Once hot, add the zucchini balls and cook for about 3-4 minutes on each side, or until golden brown and crispy on the outside.
