Zucchini and Vegetable Patties: A Flavorful, Healthy Veggie Snack

Prepare the Zucchini: Start by grating the zucchini using a box grater or food processor. Place the grated zucchini in a colander, sprinkle with salt, and let it sit for about 10 minutes to draw out excess moisture.

Drain the Zucchini: After 10 minutes, press the zucchini firmly with your hands or a clean kitchen towel to remove as much water as possible. This step is key to ensuring your patties stay firm and don’t become soggy.

Mix the Ingredients: In a large mixing bowl, combine the drained zucchini with the eggs, breadcrumbs (if using), grated cheese, chopped onion, grated carrot, garlic powder, and pepper. Mix everything together until well combined.

Form the Patties: Take small portions of the mixture and shape them into patties. You can make them as thick or thin as you prefer, depending on your texture preference.

Fry the Patties: Heat a tablespoon of olive oil in a large skillet over medium heat. Once the oil is hot, add the patties to the pan. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Be careful not to overcrowd the pan—work in batches if necessary.

Drain and Serve: Once the patties are crispy and golden, remove them from the skillet and place them on a plate lined with paper towels to absorb any excess oil.

Serve: Serve these zucchini patties warm with a side of your favorite dipping sauce, such as tzatziki, yogurt, or a spicy ketchup. They also pair wonderfully with a fresh salad.
