Grate the zucchini and carrot into a bowl.
Sprinkle with a pinch of salt and let it sit for 5-10 minutes. This will draw out excess moisture.
Squeeze out the excess liquid using a clean kitchen towel or your hands.
Step 2: Make the Batter
Add the chopped onion, egg, flour, water, vegetable oil, cheese (if using), and garlic to the zucchini and carrot mixture.
Stir everything together until well combined. The batter should be thick but not too dry.
Step 3: Cook the Fritters
Heat a mix of vegetable oil and butter in a frying pan over medium heat.
Scoop small portions of the batter into the pan and flatten them slightly.
Fry for 2-3 minutes per side until golden brown and crispy.
Transfer to a paper towel-lined plate to absorb excess oil.
