In a medium saucepan, bring the water and vinegar to a boil. Reduce the heat to low.
Add Flavor:
Stir in the garlic, salt, sugar, red pepper flakes, black peppercorns, bay leaf, mustard seeds, and coriander seeds. Let simmer for 5 minutes to blend the flavors.
Cook the Shrimp:
Add shrimp to the simmering pot and cook for 2–3 minutes, just until they turn pink and are cooked through.
Cool the Mixture:
Remove from heat and allow to cool for 10 minutes.
Assemble and Store:
Place the thinly sliced onion in a clean jar or container. Pour the shrimp and liquid mixture over the onion.
Refrigerate:
Seal the jar and refrigerate for at least 24 hours to allow the flavors to fully develop.
