Zesty Orange Cake: Moist, Flourless, and Dairy-Free

Wash the oranges thoroughly. Place them in a pot of water and boil for 1 hour to soften and remove any bitterness from the peel.
After boiling, drain the water and let the oranges cool. Cut them into quarters, remove any seeds, and blend the entire orange (peel included) into a smooth purée.
Step 2: Prepare the Batter

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
In a mixing bowl, beat the eggs and sweetener until light and fluffy.
Gently fold in the orange purée, almond flour, baking powder, and salt. Mix until just combined.
Step 3: Bake the Cake

Pour the batter into the prepared cake pan and smooth the top.
Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
