In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook for 5–6 minutes until softened and fragrant.
2. Add Garlic
Stir in the minced garlic and cook for 1 more minute until aromatic.
3. Add Broth and Orzo
Pour in the chicken broth and bring it to a boil. Stir in the orzo pasta, reduce the heat to a simmer, and cook for 8–10 minutes until orzo is tender.
4. Add Chicken and Seasonings
Mix in the shredded chicken, oregano, black pepper, and salt. Simmer for another 5 minutes to heat through.
5. Finish with Lemon and Dill
Stir in the fresh lemon juice and chopped dill. Taste and adjust seasoning as needed.
6. Serve
Ladle into bowls and garnish with lemon slices and extra dill for a beautiful presentation.
