Preheat your oven to 400°F (200°C) or heat a grill pan over medium heat.
Season the Salmon:
Pat the salmon fillets dry with paper towels.
In a small bowl, mix jerk seasoning and lemon pepper. Rub this spice blend evenly over both sides of each salmon fillet.
Make the Marinade:
In another bowl, whisk together olive oil, lemon juice, minced garlic, and honey.
Marinate:
Place salmon fillets in a shallow dish or resealable bag and pour the marinade over them. Let sit for at least 10 minutes at room temperature (or up to 1 hour in the fridge for deeper flavor).
Cook the Salmon:
Oven: Place salmon on a foil-lined baking sheet. Bake for 12–15 minutes, or until the salmon flakes easily with a fork.
Stovetop/Grill: Heat a little oil in a grill pan or skillet. Sear salmon for 4–5 minutes per side, depending on thickness, until cooked through.
Serve:
Drizzle any remaining juices over the top and serve hot with lemon wedges, rice, or veggies.
