Yummy Potato Cheese Balls

In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, green onions, garlic powder, and onion powder.
Season with salt and pepper to taste. Mix everything together until fully combined.
Step 2: Shape the Potato Balls
Take about 1-2 tablespoons of the potato mixture and roll it into a ball. Repeat until all the mixture is used up.
Place the formed potato balls on a plate or tray.
Step 3: Coat the Potato Balls
Set up a dredging station:
In one shallow bowl, place the flour.
In another bowl, place the beaten eggs.
In a third bowl, place the panko breadcrumbs.
Roll each potato ball first in the flour, then dip it in the egg, and finally coat it with the panko breadcrumbs. Make sure the balls are fully coated for a crispy texture.
Step 4: Fry the Potato Cheese Balls
Heat about 2 inches of oil in a deep skillet or fryer over medium heat.
Carefully place the potato balls into the hot oil, a few at a time, ensuring they don’t overcrowd the pan. Fry for 2-3 minutes on each side or until golden brown and crispy.
Use a slotted spoon to remove the balls from the oil and place them on a paper towel-lined plate to drain any excess oil.
Step 5: Serve and Enjoy
Serve the Yummy Potato Cheese Balls hot with your favorite dipping sauce, such as ranch dressing, marinara sauce, or sour cream.
