Pat the pork chops dry with paper towels and season both sides with salt and pepper.
Heat a large skillet over medium-high heat and add olive oil. Once hot, add the pork chops and sear them for 4-5 minutes per side until they develop a golden brown crust. Remove the pork chops from the skillet and set them aside.
Make the Honey Garlic Sauce:
In the same skillet, reduce the heat to medium and add the minced garlic. Sauté the garlic for about 30 seconds, being careful not to burn it.
Stir in the honey, soy sauce, Dijon mustard, vinegar, and ginger (if using). Let the sauce simmer for 2-3 minutes, stirring occasionally, until it thickens slightly and becomes glossy.
Taste and adjust the seasoning if needed, adding more soy sauce, honey, or vinegar according to your preference.
Cook the Pork Chops in the Sauce:
Return the pork chops to the skillet, spooning the sauce over them. Cover the skillet and cook the pork chops for an additional 5-7 minutes, depending on thickness, until the pork reaches an internal temperature of 145°F (63°C). The pork chops will absorb the flavor of the sauce and become tender.
For a thicker glaze, let the sauce reduce further before serving.
Serve:
Garnish the pork chops with freshly chopped parsley and serve them hot with the honey garlic sauce drizzled over the top.
