Winter Vegetable Gratin with Feta

Preheat the oven to 180°C (350°F).
Peel the potatoes and carrots, then slice them into thin rounds.
Wash and slice the zucchini into rounds.
Thinly slice the onion and chop the garlic.
2️⃣ Sauté the Onion and Garlic:
In a frying pan, heat a little olive oil over medium heat.
Add the onion and garlic, sautéing them until they are soft and translucent (about 3-4 minutes).
3️⃣ Layer the Vegetables:
In a gratin dish, layer the sliced vegetables in the following order: potatoes, carrots, and zucchini.
Season each layer with a pinch of salt, pepper, and a sprinkle of Herbs of Provence.
4️⃣ Add the Onion-Garlic Mixture:
Add the sautéed onion and garlic mixture evenly over the vegetable layers.
5️⃣ Add the Feta and Crème Fraîche:
Crumble the feta cheese and scatter it over the top of the vegetables.
Pour the crème fraîche evenly over the gratin, covering the vegetables.
6️⃣ Bake the Gratin:
Place the dish in the preheated oven and bake for about 45 minutes, or until the vegetables are tender and the top is golden and bubbly.
