Prepare the Coffee: Brew a strong cup of coffee and let it cool to room temperature. The strength of the coffee will really enhance the flavor, so don’t hold back on the coffee grounds.
Whisk the Eggs: In a mixing bowl, crack the eggs and add the sugar. Whisk them together until fully blended and smooth.
Add Coffee: Slowly add the cooled coffee to the egg mixture, whisking continuously to prevent the eggs from curdling. Continue whisking until everything is fully incorporated.
Cook the Mixture: Pour the mixture into a non-stick pan over medium-low heat. Stir constantly to ensure it cooks evenly and doesn’t stick to the bottom. In about 5-8 minutes, the mixture will begin to thicken into a smooth, creamy consistency.
Serve: Once thickened, remove the pan from the heat. You can serve this as is, or for a smoother texture, use a blender to give it a quick pulse before serving.
