Whipped Feta Dip with Roasted Tomatoes

Preheat the oven to 200°C (400°F).
Place the halved cherry tomatoes on a baking sheet.
Drizzle with olive oil, season with salt, pepper, and oregano, and toss to coat.
Roast for 15-20 minutes, until soft and slightly caramelized. If using balsamic vinegar, drizzle it over the tomatoes in the last 5 minutes.
Step 2: Make the Whipped Feta
In a food processor, combine feta cheese, cream cheese, Greek yogurt, olive oil, lemon juice, garlic, oregano, and black pepper.
Blend until smooth and creamy. Scrape down the sides as needed.
Taste and adjust seasoning if necessary.
Step 3: Assemble & Serve
Spread the whipped feta dip onto a serving plate or shallow bowl.
Top with the roasted tomatoes, along with any juices from the pan.
Drizzle with olive oil or honey for extra flavor.
Garnish with chopped fresh basil or parsley.
Serve immediately with toasted bread, crackers, or fresh veggies.
