Vibrant Arroz Rojo: Traditional Mexican Red Rice Side Dish

Toast the Rice:
In a medium saucepan, heat oil over medium heat. Add rice and cook, stirring frequently, for about 5–7 minutes or until the grains are golden brown.

Sauté Aromatics:
Add chopped onion and garlic to the rice and sauté for 1–2 minutes until fragrant.

Add Tomato and Simmer:
Pour in the blended tomato (or tomato sauce) and stir to coat the rice. Let it simmer for about 2 minutes until slightly thickened.

Add Broth and Seasoning:
Stir in the chicken broth, cumin (if using), and salt. Bring to a boil.

Cook the Rice:
Reduce heat to low, cover the pot, and let it cook for 18–20 minutes until the rice is tender and the liquid is absorbed.

Fluff and Serve:
Turn off the heat and let it sit, covered, for 5 minutes. Fluff with a fork and garnish with fresh cilantro or a squeeze of lime if desired.
