Very Tasty, Soft, and Tender Apple Cookies!

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Prepare the Dough:
In a large mixing bowl, whisk together the eggs and sugar until smooth. Add the softened butter and vanilla extract, and mix until fully incorporated.

Add Dry Ingredients:
In a separate bowl, combine the flour, baking powder, and a pinch of salt. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.

Add Apples and Extras:
Gently fold in the diced apples and dried cherries, raisins, or nuts (if using). The apples will release some moisture, making the dough slightly more pliable.

Form the Cookies:
Using a spoon, scoop out spoonfuls of the dough and place them onto the prepared baking sheet. Leave a little space between each cookie, as they will spread slightly.

Bake:
Bake in the preheated oven for 12-15 minutes or until the edges are golden brown and the center is set.

Cool and Serve:
Let the cookies cool on a wire rack for a few minutes before serving. Enjoy with your favorite tea!
