Vegetarian Bisquick Impossible Quiche

Preheat your oven to 375°F (190°C).

Grease a 9-inch (23 cm) pie dish or baking dish with cooking spray or a light coating of oil.

Sauté the Vegetables

Heat 1 tablespoon of olive oil in a skillet over medium heat.

Add the diced onion and cook for 2-3 minutes until softened.

Stir in the chopped broccoli and cook for another 3 minutes.

Add the minced garlic and cook for 30 seconds until fragrant. Remove from heat and let cool slightly.

Prepare the Quiche Batter

In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper.

Add the Bisquick baking mix and whisk until smooth.

Assemble the Quiche

Spread the sautéed broccoli, onions, and garlic evenly in the greased pie dish.

Pour the Bisquick batter over the vegetables.

Bake

Place the dish in the preheated oven and bake for 30-35 minutes or until the center is set and the top is golden brown.

Insert a knife into the center—if it comes out clean, the quiche is ready!

Cool and Serve

Let the quiche cool for 5-10 minutes before slicing. Serve warm and enjoy!
