Vegan Lentil Buns: The Flourless, Sugar-Free, and Yeast-Free Breakfast Delight

Prepare the lentils: If you haven’t already cooked the lentils, rinse and cook them according to the package instructions until tender. Drain well and allow them to cool slightly.

Blend the ingredients: In a food processor, combine the cooked lentils, olive oil, salt, garlic powder, dried herbs (if using), and baking powder. Pulse until the mixture forms a thick, dough-like consistency. If the mixture is too thick, you can add water a tablespoon at a time to help it blend more smoothly.

Shape the buns: Using your hands or a spoon, divide the mixture into small portions and shape them into round buns. You should be able to make about 4-6 buns, depending on the size you prefer.

Cook the buns: Heat a non-stick skillet or griddle over medium heat and lightly grease it with a small amount of oil. Place the lentil buns in the skillet and cook for about 3-4 minutes on each side, until golden brown and slightly crispy.

Serve: Once the buns are cooked, remove them from the skillet and let them cool slightly. Enjoy them as-is, or top them with your favorite spread, like avocado, hummus, or vegan butter.
