In a medium saucepan, combine the sugar, cocoa powder, milk, and butter. Heat over medium heat, stirring constantly until the butter is melted and the mixture is smooth. Bring it to a gentle simmer.
Break the cookies into smaller pieces and add them to the saucepan. Stir well to ensure the cookies are coated in the chocolate mixture.
Let the mixture sit for a minute, allowing the cookies to soften slightly, then pour it into the bottom of a serving dish or individual serving glasses. Press gently to level it out, creating a firm base.
Make the Chocolate Cream:
In a separate bowl, whisk together the egg yolks, milk, and corn starch until smooth and well combined.
Pour the mixture into a saucepan over medium heat and cook, whisking continuously, until it thickens and becomes creamy. Be patient; this will take about 5-7 minutes.
Once thickened, remove from heat and stir in the chopped walnuts and grated dark chocolate. Continue to stir until the chocolate has fully melted and the cream is smooth.
Assemble the Dessert:
Pour the thick chocolate cream over the cookie base. Spread it evenly with a spatula to cover the entire surface.
Let the dessert cool to room temperature, then refrigerate it for at least 1 hour to firm up before serving.
