Ultimate Comfort Food: Savory Ground Beef and Crispy Potato Skillet

Heat a large skillet over medium-high heat and add olive oil.

Add the chopped potatoes to the skillet and season with salt, black pepper, and rosemary.

Cook the potatoes for 15-20 minutes, stirring occasionally, until they are golden brown and crispy on the outside but tender inside. Remove them from the skillet and set aside.

Cook the Ground Beef Mixture:

In the same skillet, add the ground beef and cook over medium heat until browned, breaking it up with a spoon as it cooks.

Add the chopped onion, garlic, and bell pepper. Cook until softened, about 5 minutes.

Stir in the peas, paprika, cumin, Worcestershire sauce, salt, and black pepper. Cook for another 5 minutes, until everything is well-combined and heated through.

Combine Potatoes and Beef:

Add the crispy potatoes back into the skillet with the beef mixture. Gently stir to combine, letting the flavors meld together for another 2-3 minutes.

Prepare the Eggs:

While the beef and potatoes are combining, cook the eggs as desired. You can either fry them sunny-side-up, scrambled, or poached.

Season the eggs with salt and pepper.

Serve:

Plate the potato and beef mixture and top each serving with a cooked egg.

Garnish with freshly chopped parsley for a fresh touch.
