Traditional Italian Baked Potato and Sausage Casserole

Preheat your oven to 180°C (350°F). Peel and slice the potatoes into thin rounds.

Prepare the Egg Mixture:
In a bowl, whisk the eggs with sour cream. Add salt, black pepper, and chopped spring onions. Mix well.

Assemble the Casserole:
Grease a baking dish with olive oil. Arrange half of the sliced potatoes in a single layer. Add half of the sliced sausages and diced tomato. Pour half of the egg mixture over the layers.
Repeat the layering with the remaining potatoes, sausages, and egg mixture.

Bake:
Cover the dish with foil and bake for 25 minutes. Remove the foil, sprinkle grated Parmesan on top, and bake for another 10-15 minutes until golden brown.

Serve:
Let it cool slightly before slicing. Serve warm and enjoy!
