The Best Gluten-Free Lentil Cheese Bread (No Sugar, No Yeast)


Prepare the Lentils: Start by cooking the lentils. Rinse them thoroughly, then cook them in water until soft, about 20-25 minutes. Drain any excess water and let them cool slightly.

Mix the Ingredients: In a large bowl, mash the cooked lentils using a fork or potato masher until smooth, leaving a few chunks for texture. Add the eggs, yogurt, salt, dried garlic, grated Parmesan cheese, and chopped parsley to the mashed lentils. Mix until well combined.

Add the Baking Powder: Sprinkle the baking powder into the mixture and stir until the dough thickens slightly. Then, add the olive oil and mix again to combine everything evenly.

Prepare the Baking Pan: Preheat your oven to 180°C (350°F). Line a loaf pan with parchment paper or lightly grease it with olive oil.

Shape and Bake: Transfer the lentil mixture into the prepared pan and smooth the top with a spatula. Sprinkle sesame seeds over the top for an extra crunch.

Bake: Place the loaf in the preheated oven and bake for about 30-35 minutes, or until the bread is firm and a toothpick inserted into the center comes out clean.

Cool and Serve: Let the bread cool in the pan for a few minutes before transferring it to a wire rack to cool completely. Slice and serve!
