Pat the mackerel dry with paper towels to remove excess moisture.
Score the skin with shallow diagonal cuts on both sides to help the seasoning penetrate.
In a small bowl, mix olive oil, lemon juice, salt, black pepper, paprika, and minced garlic.
Rub the seasoning mixture all over the fish, including inside the cavity.
Step 2: Grill the Mackerel
Heat a non-stick Teflon pan over medium heat and add a small amount of oil.
Once the pan is hot, place the mackerel skin-side down.
Cook for 4-5 minutes per side, pressing gently to ensure even cooking. The skin should be crispy, and the flesh should be opaque and flaky.
Step 3: Serve and Garnish
Remove the fish from the pan and transfer it to a plate.
Sprinkle with fresh parsley and serve with lemon wedges.
