Tasty Lentil Bread: The Best Gluten-Free Cheese Bread

Cook the lentils according to package instructions until soft. Once cooked, blend them into a smooth puree using a food processor or blender.

Mix the Wet Ingredients:

In a large mixing bowl, whisk together the eggs, yogurt, and olive oil until smooth and well combined.

Add Dry Ingredients:

To the wet ingredients, add the blended lentils, salt, garlic powder, grated Parmesan, parsley, and baking powder. Mix thoroughly until all ingredients are fully incorporated.

Prepare the Pan:

Preheat the oven to 180°C (350°F). Grease a baking pan with vegetable oil or line it with parchment paper. For a more rustic look, use a loaf pan or an 8×8-inch square pan.

Bake the Bread:

Pour the mixture into the prepared pan and smooth the top with a spatula. Sprinkle sesame seeds over the top for a nice finish. Bake in the preheated oven for 30-35 minutes, or until the bread is golden and a toothpick inserted into the center comes out clean.

Cool and Serve:

Let the bread cool for a few minutes before slicing. Serve warm or at room temperature with your favorite dips, soups, or as a side to any meal.
