Preheat your oven to 400°F (200°C).
Prepare the Potatoes:
Peel and chop the potatoes into bite-sized pieces. Place them in a large bowl and toss with 1 tablespoon of oil, rosemary, salt, and pepper. Make sure the potatoes are evenly coated with the seasoning.
Season the Chicken:
Season the chicken fillets with salt and pepper on both sides.
Cook the Chicken and Potatoes:
Heat the remaining tablespoon of oil in an oven-safe pan over medium-high heat. Add the chicken fillets and cook for 3-4 minutes on each side, just to sear them and develop a nice golden crust.
Combine and Roast:
Once the chicken is seared, add the seasoned potatoes to the pan around the chicken. Transfer the entire pan to the preheated oven and roast for 25-30 minutes, or until the chicken is fully cooked and the potatoes are tender and golden brown. Make sure to check the chicken’s internal temperature—it should reach 165°F (75°C).
Serve:
Once everything is cooked through, remove from the oven and let it rest for a few minutes. Serve the chicken with a generous portion of the roasted potatoes. Optionally, garnish with fresh herbs for extra flavor.
