Taco Pasta Salad

Bring a large pot of salted water to a boil and cook the rotini pasta according to the package directions. Drain and set aside to cool.

2️⃣ Cook the Ground Beef:
In a skillet over medium-high heat, brown the ground beef. Once the beef is cooked through, drain any excess grease.

Stir in the taco seasoning (and a bit of water if the packet instructions call for it). Let it simmer for a couple of minutes until fully combined and heated. Remove from heat and set aside to cool.

3️⃣ Prepare the Veggies:
While the beef and pasta cool, chop the red and green bell peppers, red onion, and tomatoes. Slice the black olives and corn kernels.

4️⃣ Make the Dressing:
In a small bowl, whisk together the sour cream, mayonnaise, lime juice, and a pinch of salt and pepper. Adjust seasoning as needed.

5️⃣ Assemble the Salad:
In a large bowl, combine the cooled pasta, taco-seasoned ground beef, chopped vegetables, and shredded cheese.

Pour the dressing over the salad and toss gently to coat everything evenly.

6️⃣ Garnish and Serve:
Garnish with chopped cilantro and serve immediately or refrigerate until ready to serve.
