Introduction
This Taco Pasta Salad is a fun twist on traditional taco night. Combining hearty ground beef, seasoned pasta, and fresh veggies, it’s a perfect dish for a quick weeknight meal or a crowd-pleasing potluck side. It’s delicious, satisfying, and can be made ahead for easy meal prep!

Ingredients:
16 oz rotini pasta (or other medium-sized pasta like penne or bowtie)

1 lb ground beef

1 packet taco seasoning

1/2 cup diced red bell pepper

1/2 cup diced green bell pepper

1/4 cup diced red onion

1 cup corn kernels (fresh, frozen, or canned)

1 cup cherry tomatoes, halved

1 cup shredded cheddar cheese

1/2 cup black olives, sliced

1/4 cup chopped fresh cilantro (optional)

1/2 cup sour cream

1/2 cup mayonnaise

1 tbsp lime juice

Salt & pepper, to taste
