2 cups grated sweet potato

1 cup grated zucchini (squeezed to remove excess water)

2 eggs (beaten)

1/4 cup all-purpose flour (or almond flour for gluten-free)

1/4 cup grated Parmesan cheese

2 green onions (chopped, plus extra for garnish)

2 garlic cloves (minced)

1/2 tsp smoked paprika

Salt & pepper to taste

2 tbsp olive oil (for frying)
