In a large bowl, combine the grated sweet potato, zucchini, eggs, flour, Parmesan cheese, green onions, garlic, smoked paprika, salt, and pepper.

Mix well until the ingredients are evenly combined.

Form the Fritters:

Scoop about 2 tablespoons of the mixture and flatten it into small patties.

Cook the Fritters:

Heat olive oil in a large skillet over medium heat.

Add the fritters in batches, cooking for about 3-4 minutes per side, until they are golden brown and crispy.

Serve:

Remove the fritters from the skillet and place them on paper towels to drain excess oil.

Garnish with extra green onions and serve warm with your favorite dipping sauce.
