Sweet Honey Garlic Pork Chops with Creamy Mashed Potatoes

Start by boiling the cubed potatoes in a large pot of salted water. Bring to a boil, then reduce the heat and let the potatoes cook for about 10-12 minutes, or until they are fork-tender.
Drain the potatoes and return them to the pot. Add the butter and heavy cream.
Mash the potatoes until smooth and creamy. Season with salt to taste, then set aside and cover to keep warm.
Step 2: Prepare the Pork Chops
Heat olive oil in a large skillet over medium-high heat.
Season the pork chops with salt and pepper on both sides.
Add the pork chops to the skillet and sear them for about 4-5 minutes on each side until they are golden brown and cooked through (internal temperature should reach 145°F). Remove the pork chops from the skillet and set aside.
Step 3: Make the Honey Garlic Sauce
In the same skillet, add the minced garlic and cook for about 30 seconds, or until fragrant.
Stir in the honey and soy sauce. Let the sauce simmer for about 2-3 minutes until it thickens slightly.
Step 4: Coat the Pork Chops
Return the pork chops to the skillet and spoon the honey garlic sauce over them. Let the pork chops cook in the sauce for an additional 2-3 minutes, allowing the sauce to caramelize and coat the chops.
Step 5: Serve
Serve the honey garlic pork chops with a generous scoop of creamy mashed potatoes. Drizzle any extra honey garlic sauce from the skillet over the mashed potatoes for an added burst of flavor.
