Coat the halloumi slices with sweet chilli sauce and chili flakes (if using). Let it marinate for at least 15 minutes for the flavors to develop.
Fry the Halloumi:
Heat rapeseed oil in a non-stick pan over medium heat. Fry the halloumi slices until golden brown, about 2 minutes per side. Add minced garlic halfway through to infuse the flavor.
Prepare the Tzatziki:
In a bowl, mix Greek yogurt, grated cucumber, lime juice, and salt. Stir well until smooth and creamy.
Assemble the Wraps:
Spread a generous amount of tzatziki on each wrap.
Layer with baby gem lettuce, sliced cucumber, grated carrot, and the fried halloumi.
Optionally, drizzle extra sweet chilli sauce and tzatziki on top for added flavor.
Garnish with fresh coriander, then fold the wrap and enjoy.
