Peel and thinly slice the red onions. Set aside.

Make the Sweet and Sour Mixture:
In a medium saucepan, combine the white vinegar, honey (or maple syrup), olive oil, salt, black pepper, and water. Bring to a gentle simmer over medium heat, stirring occasionally until the honey is fully dissolved.

Cook the Onions:
Add the sliced onions to the saucepan with the vinegar mixture. Stir to coat the onions evenly. If you’re using crushed red pepper flakes or fresh herbs, add them now. Simmer for 15-20 minutes, stirring occasionally, until the onions are tender and have absorbed the flavors.

Serve:
Once the onions are soft and the sauce has slightly thickened, remove from heat. Serve the onions hot or at room temperature as a flavorful side dish.
