In a large bowl, combine the pork, whole black pepper, salt, brown sugar, and water.
Mix well and let the pork brine for 7-8 hours or overnight for maximum flavor.
Step 2: Drain and Prepare for Marinating
After brining, discard the solution and place the pork in a strainer to remove excess water.
Step 3: Make the Marinade and Marinate the Pork
In a mixing bowl, combine all the marinade sauce ingredients.
Transfer the drained pork into a ziplock bag or an airtight container.
Pour the marinade over the pork and mix well to coat each piece evenly.
Let the pork marinate overnight for the best flavor.
Step 4: Skewer the Pork and Rest
Thread the marinated pork onto skewers.
Let them rest for 30 minutes before grilling.
Step 5: Prepare the Basting Sauce
Set aside the leftover marinade sauce.
In a small bowl, mix the melted butter and atchuete powder.
Stir the mixture into the leftover marinade sauce to create a basting sauce.
Step 6: Grill the Pork BBQ
