Sweet and Savory Pork BBQ Skewers

In a large bowl, combine the pork, whole black pepper, salt, brown sugar, and water.
Mix well and let the pork brine for 7-8 hours or overnight for maximum flavor.
Step 2: Drain and Prepare for Marinating
After brining, discard the solution and place the pork in a strainer to remove excess water.
Step 3: Make the Marinade and Marinate the Pork
In a mixing bowl, combine all the marinade sauce ingredients.
Transfer the drained pork into a ziplock bag or an airtight container.

Set aside the leftover marinade sauce.
In a small bowl, mix the melted butter and atchuete powder.
Stir the mixture into the leftover marinade sauce to create a basting sauce.
Step 6: Grill the Pork BBQ
Preheat the grill to medium heat.
Slow-cook the skewered pork for 30 minutes, flipping occasionally.
Every 5 minutes, brush the pork with the prepared basting sauce to keep it moist and flavorful.
