Sweet and Savory Brown Sugar Bacon-Wrapped Pork Tenderloin

Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil or parchment paper for easy cleanup.
Season the pork tenderloin with salt and pepper on all sides.
In a small bowl, mix together the brown sugar, Dijon mustard, garlic powder, onion powder, and smoked paprika (if using) to form a glaze.
Heat olive oil in a skillet over medium-high heat. Sear the pork tenderloin for 2-3 minutes on each side, until browned.
Once seared, brush the brown sugar glaze all over the pork tenderloin, ensuring it’s evenly coated.
Lay the bacon slices out on a clean surface. Place the glazed pork tenderloin in the center and wrap it with the bacon slices, securing the ends with toothpicks if necessary.
Transfer the wrapped pork tenderloin to the prepared baking sheet and roast in the preheated oven for 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
Once cooked, remove the pork from the oven and let it rest for 5-10 minutes before slicing.
Garnish with fresh herbs if desired, and serve immediately.
