Sweet and Savory Baked Pork Loin: A Flavorful Feast

Prepare the Pork Loin: Preheat your oven to 375°F (190°C). Pat the pork loin dry with paper towels to ensure a crispy crust. Rub the pork loin with olive oil, minced garlic, rosemary, thyme, salt, and pepper. Make sure it’s well coated with the seasoning mixture.

Make the Glaze: In a small bowl, whisk together the honey, brown sugar, Dijon mustard, apple cider vinegar, and soy sauce (if using). This will create a sweet and tangy glaze that will caramelize on the pork.

Sear the Pork: Heat a large oven-safe skillet over medium-high heat. Add a bit of olive oil and sear the pork loin on all sides for 2-3 minutes, until it’s golden brown. This will help lock in the juices and create a nice crust.

Roast the Pork Loin: Once the pork loin is seared, reduce the heat to medium and pour the glaze over the pork. Use a spoon to coat it evenly with the glaze. Place the skillet in the preheated oven and roast for about 45-60 minutes, or until the internal temperature reaches 145°F (63°C).

Baste and Finish: While the pork is roasting, baste it with the glaze every 15-20 minutes. When the pork loin is almost done, melt butter in the skillet and spoon it over the pork for extra richness.

Rest and Slice: Once the pork reaches the desired internal temperature, remove it from the oven and let it rest for 10 minutes. This will allow the juices to redistribute, ensuring a juicy and tender roast.

Serve: Slice the pork loin into thin slices and serve with the remaining glaze from the skillet. Pair it with roasted vegetables, mashed potatoes, or a fresh salad for a complete meal.
