Swedish Apple Cake

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Make the Batter:

In a large mixing bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs one at a time, followed by the vanilla extract.

In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Prepare the Apples:

Peel, core, and slice the apples thinly.

Fold half of the apple slices into the batter, reserving the other half for layering on top of the cake.

Assemble the Cake:

Pour the batter into the prepared cake pan and spread it out evenly.

Arrange the remaining apple slices in a decorative pattern on top of the batter.

Bake the Cake:

Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Serve:

Slice the cake and serve it as is, or with a dusting of powdered sugar or a scoop of vanilla ice cream for extra indulgence.
