Stuffed Potatoes: An Easy and Savory Dish

Start by boiling the potatoes until tender. Once they are cooked, peel and mash them in a bowl.

Mix the Filling:

In a separate bowl, whisk the egg and add it to the mashed potatoes along with the mozzarella cheese, chopped salami, a pinch of nutmeg, salt, and pepper.

Stir the mixture until well combined.

Stuff the Potatoes:

Cut the boiled potatoes in half lengthwise. Scoop out some of the insides to create a small well in each potato half.

Fill each potato half with the cheese and salami mixture, pressing down gently to compact the filling.

Bake the Potatoes:

Preheat your oven to 180°C (350°F).

Place the stuffed potatoes on a baking tray, drizzle a little EVO oil over the tops, and bake for 15-20 minutes or until the cheese is melted and the tops are golden brown.

Serve:

Remove from the oven and let cool slightly before serving. These stuffed potatoes make a great side dish or a satisfying meal on their own.
