Steak Pinwheels: Savory Beef Rolls with Flavorful Fillings

Lay the steaks flat on a clean surface. Use a meat mallet to gently pound them to an even thickness, about 1/4 inch, if necessary. This ensures they will roll up easily and cook evenly.
Season both sides of the steaks with salt and black pepper.
Step 2: Prepare the Filling
In a small bowl, combine the chopped spinach, mozzarella cheese, Parmesan cheese, minced garlic, and rosemary.
Mix well until the ingredients are evenly combined.
Step 3: Assemble the Pinwheels
Spread an even layer of the spinach and cheese mixture over each steak, leaving a small border along the edges.
Carefully roll the steak up from one end, tightly but not too tight to prevent the filling from spilling out.
Secure each pinwheel with toothpicks or kitchen twine to hold the roll together during cooking.
Step 4: Sear the Pinwheels
Heat olive oil in a large skillet over medium-high heat.
Once hot, place the steak pinwheels in the skillet and sear for 2-3 minutes on each side until browned and caramelized. You may need to do this in batches if your skillet isn’t large enough.
Once the pinwheels are seared on all sides, reduce the heat to medium and cover the skillet. Continue to cook for an additional 5-7 minutes, turning occasionally, until the steak is cooked to your desired doneness (medium-rare, medium, etc.).
Step 5: Rest and Serve
Remove the pinwheels from the skillet and let them rest for 5 minutes before slicing.
Slice each pinwheel into rounds, removing the toothpicks or twine before serving.
