Steak Bites Loaded Baked Potatoes

Cook the Steak Bites – Heat the olive oil in a skillet over medium-high heat. Season the steak pieces with garlic powder, paprika, salt, and pepper. Cook the steak bites in the skillet for 3-5 minutes or until they reach your desired level of doneness. Remove from heat and set aside.

Prepare the Potatoes – While the steak cooks, bake the russet potatoes in the oven at 400°F (200°C) for 45-60 minutes, or until tender. Once baked, slice the potatoes in half lengthwise and scoop out some of the flesh, creating a well for the toppings.

Assemble the Loaded Potatoes – Place the halved baked potatoes on a serving platter. Top each potato half with a spoonful of shredded cheddar cheese, then add the cooked steak bites on top.

Melt the Cheese – Pop the loaded potatoes under the broiler for 1-2 minutes or until the cheese melts and becomes bubbly.

Top & Serve – Remove from the oven and top each potato with a dollop of sour cream, a sprinkle of chopped green onions, and a generous amount of crispy bacon bits.
