Heat 1/2 tablespoon of olive oil in a skillet over medium-high heat. Season the sliced steak with garlic powder, onion powder, smoked paprika, salt, and pepper.
Add the steak to the skillet and cook for 3-4 minutes, or until browned and cooked to your desired level of doneness. Remove the steak from the skillet and set aside.
2️⃣ Cook the Shrimp:
In the same skillet, add the remaining 1/2 tablespoon of olive oil. Season the shrimp with salt, pepper, and a pinch of garlic powder.
Cook for 2-3 minutes on each side, or until the shrimp are opaque and cooked through. Remove from the skillet and set aside.
3️⃣ Make the Queso:
In a medium saucepan over low heat, add the softened cream cheese, cheddar cheese, and Monterey Jack cheese.
Slowly stir in the milk, a little at a time, until the cheese is melted and the dip reaches your desired consistency. Stir frequently to avoid burning.
4️⃣ Combine:
Once the queso is smooth and creamy, stir in the cooked steak and shrimp. If desired, add diced tomatoes for an extra burst of flavor. Stir until everything is combined and heated through.
5️⃣ Garnish and Serve:
Transfer the queso dip to a serving dish. Garnish with chopped green onions and fresh cilantro, if desired. Serve warm with tortilla chips, crackers, or fresh veggies.
