Squid Stuffed with Meat and Tomato Sauce

Prepare the Squid: Clean and prepare the squid by removing the tentacles, innards, and cartilage. If using frozen squid, ensure they are fully thawed before proceeding.

Prepare the Filling: In a large pan, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent (about 5 minutes).

Add the minced meat to the pan, breaking it up with a spoon. Cook until browned and fully cooked through. Stir in the breadcrumbs, egg, oregano, salt, and black pepper. Cook for a few more minutes to combine, then remove from heat.

Stuff the Squid: Using a spoon, carefully stuff each squid with the meat mixture, making sure not to overfill them. Close the open end of each squid with a toothpick or kitchen twine to secure the filling.

Make the Tomato Sauce: In a large saucepan, heat some olive oil over medium heat. Add the canned diced tomatoes, tomato paste, and a pinch of salt and pepper. Simmer the sauce for about 10 minutes, stirring occasionally.

Cook the Stuffed Squid: Gently place the stuffed squid into the tomato sauce, making sure they are mostly submerged. Cover and simmer on low heat for 20-30 minutes, or until the squid is tender and cooked through.

Serve: Once the squid is cooked, remove the toothpicks or kitchen twine. Serve the stuffed squid hot, garnished with fresh parsley. Spoon some of the tomato sauce over the top and enjoy!
