Spring Pea & Burrata Crostini with Lemon Zest & Honey

Preheat the oven to 375°F (190°C).

Arrange the baguette slices on a baking sheet and brush both sides with olive oil.

Bake for 8-10 minutes, flipping halfway through, until the crostini is golden and crisp.

Once baked, rub each slice with the cut side of the garlic clove for extra flavor.

Prepare the Topping:

In a food processor, blend the blanched peas, mint leaves, lemon juice, salt, and black pepper until the mixture is slightly chunky.

Assemble the Crostini:

Spread a generous amount of burrata cheese on each crostini.

Top with a spoonful of the pea mixture.

Drizzle and Garnish:

Drizzle with honey and sprinkle with lemon zest.

Garnish with extra mint leaves and a pinch of red pepper flakes for a little heat (optional).
