Spinach Garlic Meatballs Stuffed with Mozzarella: A Cheesy and Flavorful Twist

Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the ground beef, chopped spinach, minced garlic, breadcrumbs, grated Parmesan, egg, salt, black pepper, and Italian seasoning. Mix everything together until well combined, using your hands or a spoon.

Form the Meatballs:
Take a small portion of the meatball mixture (about 2 tablespoons) and flatten it out in your palm. Place a cube of mozzarella cheese in the center and then fold the edges of the meat around the cheese to form a ball. Make sure the cheese is fully enclosed in the meatball to prevent it from leaking during cooking. Repeat with the remaining mixture and mozzarella cubes.

Cook the Meatballs:
Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the meatballs and cook, turning occasionally, until they are browned on all sides, about 5-7 minutes. This step will help lock in the flavor and give the meatballs a nice crust.

Bake the Meatballs:
Once the meatballs are browned, transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the meatballs are cooked through and the internal temperature reaches 160°F (71°C).

Serve:
Remove the meatballs from the oven and let them rest for a few minutes. Serve the stuffed meatballs with your favorite pasta, on a sub roll with marinara sauce, or as an appetizer with dipping sauce.
