Spinach Egg Casserole: A Hearty and Healthy Breakfast Delight

Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with cooking spray or a little butter.

Sauté the Vegetables:
In a large skillet, heat the olive oil over medium heat. Add the diced onions and cook until softened, about 3-4 minutes. Add the chopped spinach (and bell peppers, if using) and sauté for an additional 2-3 minutes until the spinach wilts down. Remove from heat and set aside to cool slightly.

Prepare the Egg Mixture:
In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and basil (if using).

Combine and Bake:
Stir the sautéed vegetables into the egg mixture, then pour the mixture into the prepared baking dish. Top with shredded cheese and cooked bacon or sausage (if using). Bake for 25-30 minutes, or until the eggs are set and lightly golden on top.

Serve and Enjoy:
Let the casserole cool for a few minutes before slicing and serving. Enjoy warm!
