Spinach Artichoke Gnocchi Bake

Preheat the oven: Preheat your oven to 400°F (200°C) and lightly grease a baking dish.

Prepare the sauce: Heat olive oil in a large oven-safe skillet over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Stir in the chopped artichokes and spinach, and cook until the spinach wilts.

Create the creamy sauce: Add heavy cream, milk, and cream cheese, stirring until smooth. Season with salt, black pepper, and red pepper flakes (if using).

Add gnocchi: Stir in the uncooked gnocchi, coating it thoroughly in the sauce. Simmer for 2-3 minutes to let the gnocchi absorb some of the sauce.

Top with cheese: Sprinkle shredded mozzarella and grated Parmesan cheese evenly over the top.

Bake: Transfer the skillet to the oven and bake for 15-20 minutes, or until the dish is bubbly and golden brown.

Serve: Let the dish cool slightly before serving. Enjoy!
