Spinach and Feta Spanakopita Cookies

Heat a skillet over medium heat. Sauté the garlic and spinach together for about 2-3 minutes, until the spinach wilts and any excess moisture evaporates. Set aside to cool.
Once cooled, mix the spinach with dill, parsley, feta cheese, ricotta cheese, nutmeg, and 1 egg. Season with salt and pepper to taste. Stir until well combined.
Prepare the Puff Pastry:

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Roll out the puff pastry sheet on a lightly floured surface. Cut the pastry into small squares or circles, about 2 inches in size for bite-sized cookies.
Assemble the Cookies:

Place a spoonful of the spinach and feta filling in the center of each pastry square or circle.
Fold the edges of the puff pastry over the filling, forming a circle. Press the edges lightly to seal the cookies.
Brush and Garnish:

Beat the second egg and brush it over the tops of the cookies for a golden finish.
Sprinkle sesame seeds on top for extra crunch and flavor.
Bake:

Place the assembled cookies on the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until the pastry is golden and puffed.
Serve:

Allow the cookies to cool slightly before serving. Enjoy them warm as a savory snack or appetizer!
