In a large pan, heat 2 tablespoons of olive oil over medium heat.
Add the chopped red onion and sauté for about 3-4 minutes, until softened.
Stir in the minced garlic and cook for another minute until fragrant.
Add the fresh spinach to the pan and cook until wilted, about 3-5 minutes. Season with salt and pepper to taste.
2. Prepare the Egg Mixture:
In a large bowl, whisk together 3 eggs and 120 ml of milk until smooth.
Gradually add the 150 g of all-purpose flour to the egg mixture, stirring until well combined. The mixture should have a smooth consistency.
3. Combine Spinach and Egg Mixture:
Once the spinach and onions are cooked, remove from the heat and allow to cool for a couple of minutes.
Add the sautéed spinach mixture to the egg mixture, and stir until evenly combined.
4. Bake the Egg Mixture:
Preheat the oven to 375°F (190°C).
Pour the spinach and egg mixture into a greased baking dish (around 9×9 inches or similar size).
Bake for 25-30 minutes, or until the egg bake is set and slightly golden on top.
5. Serve:
Once baked, remove from the oven and let it cool slightly before slicing.
Serve warm with a side of fresh salad or toasted bread.
