Spinach and Feta Chicken Rolls

In a skillet over medium heat, warm the olive oil. Add chopped onion and cook until soft and translucent, about 3–4 minutes.

Add garlic and cook for another minute.

Stir in the chopped spinach and cook until wilted. Remove from heat.

Once slightly cooled, mix in the crumbled feta and season with salt, pepper, and oregano (if using).

Prepare the Chicken

Lay each chicken breast flat and slice it horizontally to butterfly it, then pound it lightly between two sheets of plastic wrap to an even thickness.

Season both sides with salt and pepper.

Assemble the Rolls

Spoon a generous amount of the spinach-feta mixture onto each chicken breast.

Roll the chicken up tightly and secure with toothpicks or tie with kitchen twine.

Place seam-side down in a greased baking dish and lightly spray or brush the tops with olive oil.

Bake

Preheat your oven to 375°F (190°C).

Bake uncovered for 25–30 minutes, or until the chicken is cooked through and lightly golden on top.

Let rest for 5 minutes before slicing and serving.
